HelloFresh Greek-Inspired Breaded Chicken

Ingredients In The Package

  • 1 lb of Chicken Breast
  • 2 oz of Tzatziki
  • 2 potatoes (Russet)
  • 2 tbsp mayonnaise
  • 1/4 cup of Feta Cheese
  • 1/2 cup of Italian Breadcrumbs
  • 170 grams of Green Beans (or Broccoli)
  • 1 Garlic clove
  • 1/2 tbsp of Lemon-Pepper Seasoning

The Setup

Potatoes

First, you will need to preheat the oven to 450 degrees Fahrenheit.

While it warms up, cut your potatoes in fries or wedges size.

Place the fries on a baking sheet, put a tbsp of oil over the fries and sprinkle salt and pepper.

Better suggestion

Take a big bowl, put the cut potatoes in it and pour some olive oil on top. Mix with your hands (or wooden spoon) until the fries are all coated. 

Put some pink salt and pepper on top.

Mix again all together and place on a baking sheet.

Roast the potatoes in the middle of the oven for 25 to 30 minutes and flip around mid-time (flip at 15 minutes) I like my fries super crisp, sometimes I will keep them up to 35+ minutes.

Prepare the Chicken Breast

While your potatoes roast, rinse your chicken breast, dry them and cut them in “chicken fingers” style.

I like a nice “finger” of about 1 inch wide.

Try to have the same size for the other cuts so it cooks evenly in the same time frame.

How to Coat the Chicken Properly

Seems very simple as per the original recipe but it can get pretty messy quickly. 

Beware of bacteria and cross-contamination. You definitely don’t want food poisoning with this tasty dish.

  • Pat the chicken dry with a paper towel
  • Combine breadcrumbs and half of the Lemon-Pepper Seasoning
  • Coat tenders with mayo
  • Dip in the breadcrumbs-lemon-peppers mixture and coat completely

Better suggestion

Here is a better approach.

Before touching the chicken, prepare your mixture in one bowl and pour some mayonnaise into the other bowl and use a silicon brush to coat the chicken breast cutlets. 

When all done make sure you wash your hands properly and discard everything you don’t need anymore besides the chicken.

Lemon-Pepper Seasoning

If you are cooking this recipe from scratch without a meal kit, you can buy that seasoning a little bit everywhere. I use “Dion” spice (available in Canada) but if you are in the USA, use the “Club House” brand. (not sponsored by any of those above)

Use Coconut Oil in Your Pan

That’s right, this is where the magic happens.

Instead of olive oil, or butter, use 3 to 4 tbsp of coco oil and warm it up slowly up to medium level on the stove (or adjust accordingly depending on the strength of your stove.)

Add the chicken fingers coated with the mayo and the seasoning blend in the pan. 

Be careful not to overheat so it doesn’t “fry” like chicken wings!

By now, you should be able to flip the potato wedges in the oven while the chicken is cooking in the pan.

Flip the chicken after 3 minutes for another 3-4 minutes. 

They should be golden brown on each side.

Remove them carefully place them on a cooking sheet and insert them on top of the grill in the over with the potatoes being on the second half of the roasting phase.

DO NOT THROW or DISCARD the oil.

Broccoli or Green Beans

Remember I’ve just said to not discard the coconut oil?

Use it for your broccoli! 

Make sure the pan is still hot.

First, put your garlic in and cook it for about 2 minutes until it releases its aroma. 

Now, deglaze the pan with 1/2 cup of water, and scrape the bottom with a wooden spoon.

Now toss your broccoli or green beans in and cook them until they become tender. 

Happy Face Tips: Pre-bowl your green beans or broccoli for about 8 minutes or until they become “al dente” before incorporating into the pan. 

 

Feta Cheese

Follow as per the original recipe. 

Simply scramble with your fingers and sprinkle on top of the greens in the pan. 

Do not wait until it melts. 

Greek-Inspired Breaded Chicken Cooking Result

Plate the greens, the potatoes and the chicken strips into a plate and place a lump of Tzatziki sauce in the middle.

Happy FaceTips for a better sauce: I will not reinvent the wheel here but put a spoonful of sweet green relish in your tzatziki sauce, it will cut the power of the garlic and add an amazing taste!

Trust me on that one.

Honest Review

Actual time to make: 55 minutes

A dish that I will do again and again. My son loved it. The fact that I cut off the tzatziki sauce with a sweet relish made it less garlicky and more enjoyable for the whole family.

The sweet and subtle taste of the coconut oil made the chicken taste so much better. 

PROS from the original recipe:

-Easy to do

-Very tasty

-Breaded food is already a winner and feels like comfort food

-Russet potatoes are the best to make wedges. The “flesh” is tender but firm

CONS:

-Tzatziki is a bit overpowered by the garlic taste
